Discussion
The macerating or extracting process transfers over 250
flavor components in natural vanilla to a medium, usually alcohol.

The FDA further defines what can be called vanilla extract commercially.
That definition is 13.35 ounces of vanilla bean "material"
processed by 128 ounces of 40% or 80 proof ethyl alcohol.
No other additives are allowed except for sugar.

The result is a single fold or strength extract.
Doubling the amount of vanilla beans results in 2X or two fold extract and so on.

You must adjust recipes when you use 2X or more strength.

We sell a pre measured packages of extract grade beans
that have been left on the vine until they split which
maximizes the vanillin content. They can't be called A-Grade
because they are split, but they make yummy extract.

Choose from 24 grams enough for 8 ounces of extract, or
379 grams enough for 1 gallon.
